Earth Born Love

Gluten Free Mousse

This mousse is one of my family's favourite treats. I thought I would spread the love.


4 eggs, seperated

155g (130 ml) castor sugar

12,5ml strong coffee

100g 70%-dark chocolate

100g (110ml) unsalted butter, cut into blocks


Beat the egg-yellows and the castor sugar in an electric mixer until it is thick and of a light-yellow colour.

Add the coffee and beat together.

Cook water in a pot and remove from heat. Break chocolate into pieces and place in a mixing bowl that fits over the pot. Allow chocolate to melt.

Once the chocolate is melted, add the butter block-by-block and beat to form a smooth cream.

Add the chocolate-mix to the egg-sugar-mix and beat together.

Beat the egg-whites until stiff and fold into the chocolate-mix.

Place in the fridge for at least 8 hours before serving.
